The Jewish Manual

The Jewish Manual:
Practical Information in Jewish and Modern Cookery

This is the first known Jewish cookery book in English; it was written by "A Lady" (Lady Judith Cohen Montefiore ) who lived in London and Ramsgate. It was first published in 1846.
The recipes in the book follow Jewish dietary law and include typical Jewish dishes such as matso (matzo) soup and cakes, macrotes, Passover pudding, etc. There are also many foreign recipes and “standard” English dishes including Cumberland and Yorkshire pudding! In addition to the recipes there are chapters on “The Toilette” covering treatments for the complexion, hair, teeth, hands etc.

This is a reformatted edition of The Jewish Manual, with new additions. Although the recipes have not been changed, there have been corrections to spelling and grammar, notes on some obscure words have been added. The original glossary has been updated. There is a new introduction giving some detail about Lady Judith and Sir Moses Montefiore. A weights and measures conversion table has been added.
A detailed bibliography of early Jewish cookery books in English has also been included; together with other useful bibliographical sources.
